Seafood - how to be premium and sell more at the same time?

Seafood is more and more often served on our home tables. For the consumer, it is still a category of premium products. How to guarantee your product a premium rank and increase sales among the average consumer?

Seafood, originally called ‘frutti di mare’ in Italian, is a group of edible products that come from the marine environment. They are mainly crustaceans, molluscs and cephalopods. Seafood dishes are mainly eaten in the Mediterranean countries. In Poland, we most often deal with lobsters, octopus, crabs, shrimps, slightly less often with oysters or scallops.

Excellent health benefits

According to many scientific sources, seafood is one of the healthiest products thanks to the high content of vitamins B, iodine, magnesium, zinc, phosphorus, calcium, selenium and fluoride. In addition, these products are a rich source of protein and unsaturated fatty acids from the Omega-3 family. The method of their preparation is an important issue which determines the nutritional content of the final dish.

Market situation in Poland

Research by the Norwegian Council for Fish and Seafood indicates that on average 64% of Poles eat fish and seafood once a week or more. The fact that the citizens of Great Britain, France and Italy consume them much more often may prove the unsaturation of the Polish market. Moreover, the majority of Poles aged 20-49 declares their willingness to eat fish and seafood more frequently in their daily diet.

This trend is visible in retail chains such as Biedronka, Lidla, Auchan, Carrefour which each year expand their seafood offer. Their product portfolio includes both ready-meals and frozen or chilled portions of raw seafood.

Be Premium!

Seafood is considered by consumers to be a premium product not only because of the higher price of the product itself, but also because of the difficulties in its preparation and its absence in Polish waters. Nevertheless, the group of their gourmets is significantly increasing every year. The producers of this food have a difficult task ahead. On one hand, they must guarantee the premium level of their products, while popularizing their consumption among consumers without lowering the margin. In such case the perfect solution is to enrich the product with an element of benefits for the customer. EDPOL Food & Innovation recommends the development of products by adding sauces dedicated to seafood in a handy, aesthetic packaging, which is a mini-bottle. Seafood combined with chilli, mustard-honey, mustard-orange, cream-horseradish, cream, or French sauces for crustaceans: bisque or persiyad, will gain a unique taste, easy to obtain for every consumer by adding them to the product. The mini-bottle is an elegant premium packaging with a slim shape and a dispensing neck. Size variants: 25ml and 50ml will guarantee compatibility with different portions of the product in the package. Appropriate recipes for sauces make it possible to use them in both frozen and chilled products. The flat, regular packaging of the sauce makes it easy to attach to the packaging.

Summarizing, sale of premium products is an art to reconcile the exclusivity of a product with the outlays for popularizing the category other than a price reduction. Products introducing added value for the consumer come to the rescue of food producers. The mini-bottle sauces are the best proof of this.
